After lots of researching I've narrowed it down to the NFB-11 to pair with my HD598. Just want to make sure I didn't overlook anything. Is there any other amp/dac that's a better choice than the NFB-11 when pairing with the HD598?

The HD598 are fairly easy to drive, so headphone amp choice is not critical in terms of "pairing."

I have the NFB-11. Really enjoy it

For the kind of cash you would pay for the NFB-11, it might be better to upgrade from your HD598s and by a cheaper DAC/amp, like a Schiit Fulla, $79.
Get the Fulla and sell off the HD598 and buy some really nice headphones.
I'm not against the NFB-11, I own the NFB-15.32 and I'm very happy with it.
But it's usually better to spend more for headphones, then the DAC/amp.
