There’s a gas station outside of Lake Charles I would drive to just for the Boudin.
Boudin was exactly what i was mentally tasting when i posted it.

Truth! I just had the stuffin’ figuratively knocked outta me years ago for callling chili with beans in it “Texas”. Even though my recipe came from a guy that I swear had never dipped a toe outside of TX. And I saved what you put in that. I’ll give it a go this year!

I spent 3 years in the tiny town of Cabot. There’s some fine food in that state.

Ah yes, I know Cabot, ole Hwy 167 iirc.
We are under rated here for food, there are definitely some fabulous spots.

No, it’s actually the Aegir 2 that’s tripping protection at lower volume than the Aegir 1. That’s what surprised me,
Could you please try the Freya in the passive mode and see if it improves?

There are quite a few changes in design between the 1 and the 2, and the protection trigger might be set at a different point on the 2.

Okay, gurus of all things Schiit, home office question for you:

Thoughts on Modi Multibit + Sys fronting a single GHorn and Kef Q150s for near field on the desktop? Or is cheaper Modi good enough resolution here? Source is straight from Roon on a NUC.

Zero chance of headphones, and I have a handful of 6SN7s and 5692s available - but tube bypass via a switch is required, as it'll be background music most of the time.

Logic makes sense? Feel free to PM me if you've got less Schiit-centric ideas.

$350 to MAYBE $500 budget, as I still need to power my Vandys this year too!
Makes great sense. Seems a tad overkill quite sufficient for background music. Listening at loud levels in the nearfield (>83dB) is only recommended when not at the desk to suffer the brunt of the loud levels. More than two hours at that level can cause hearing damage - about 90 minutes after brain damage occurs. So... get a Rekkr and a bottle of self-control. Are those bottles still sold? :joy:

Test results really have nothing to do as to how a tube sounds. I have a number of 6SN7 NOS that test marginal or worse, and sound glorious in my equipment. It is a crap shoot, but let your brain be your guide.
Hence why I didn’t care one bit about buying, “just,” Classic grade as opposed to Collector grade.

The overnight posts here are like late night AM radio found in the deepest pockets of flyover country. I read my last post at 10:30 PM EDT, and I woke up to ~40 posts all concerning chilli with a small diversion into belt buckles.

You folks are the schiit! (and depending the provenance of the chilli, e.g. gas stations...nevermind). :stuck_out_tongue_winking_eye:

Mine uses Mayo (Dukes), white vinegar, prepared horseradish, cayenne, smoked paprika, and some other stuff. It’s delicious. On a rotisserie bird, it’s amazing!
I found a lot of recipes for this previously unknown (to me) condiment. If I do not see it in Alabama I will attempt to create it. When I eat BBQ it is always pigs or cows, birds will be a new experience. I did smoke a turkey once but ate it without sauce, and with a more conventional tomato based sauce.

got 2 gallons of Texas Red simmering...
1 lb Wagu ground beef
2 lbs ground sirloin
1 can pinto, 1 can red, 1 can black beans
3 pints cherry tomatoes
1 vidalia onion
32 oz chicken broth
2 packets of Texas Red , Himalaya Pink Salt

1 lb Alpine White Cheddar + Club Crackers

I love chili -- with or without beans, but I've been in Texas long enough to know it ain't TEXAS chili if it's got beans. I do love me hot steaming bowl of Chili with Beans as-is (w/ a little splash of Cholula) or a heaping bowl of Texas Chili (w/ a little splash of Cholula) over a square of sweet cornbread! Dammit now I'm hungry! :D
There are as many ways to make chili as there are to make pizza. I'm agnostic as to the beans/no beans question. I've started making mine by re-hydrating dried chilis (New Mexico, guajillo, ancho, whatever I can find) and blending them for the braise instead of using powders. Delicious! My current favorite recipe -

Funny - I also changed the received chip and filter chip to the newer versions to achieve 24/96. I remember running into a snag with the filter chip replacement. I think I had to add some logic to either invert the clock signal on the filter input or delay it a cycle. It's been a few years...

Sparkos are SS3602 since this version uses dual op amps.
Cool! Yeah, since the master clock is now 22/24MHz (double at 256fs 88.2/96Khz) two old TTL 74xx logic OR gates and D flip-flop latches are too slow... one of the things I checked w/oscilloscope. Was thinking those 1980's logic chips would be maxed out. Edit: Hope I don't have to change the logic... new filter chip has pads to set left-justified / standard / i2s etc, to match the original.

Couple bucks from Digikey.

This is what I found in Kentucky and Indiana. I believe Cincinnati has a similar variation. Back home in Illinois we would have referred to this as a variation of chili-mac possibly. Personally with such dishes we usually buy pico de gallo or add cans of Ro Tel, something we tend to keep in the cupboard. IMG_7668.png
