I'm wondering if adding a Schiit Mani photo preamp to my setup would make any sense.

I'm currently using a Pro-ject Debut Carbon Evo turntable into the Yamaha AS500 phono preamp. I really like the Yamaha as it is super convenient for my use, has a remote control and also I still use the iPod dock for lossless digital listening. I'm usually listening through Pioneer SP-BS22-LR speakers.

Would adding the Mani instead of using the Yamaha preamp be an decent upgrade?

Not really - it's not going to perform miracles. Save your money for vinyl, unless you need flexibility for other types of cartridges eg MC.
