Some recordings make me feels as if I am sitting in front of the performer and I can hear the instruments behind the vocals. Other recording have me feeling like the recording was made the other way with me standing behind the performer starring out into the crowd and I hear the instruments behind me.

Anyone else experience this? And, does anyone know if they ever switch up the recording to swap left and right channels or is it always mixed from the listeners point of view?

I know this sounds strange, but its what I have experienced.

Whoever is in charge of the mixer does this. They can increase instruments volume over vocals if they want to emphasize it. Different studios have different audio engineers. It has nothing to do with headphones.

Placement and numbers of microphones used during the recording makes these kind of differences as well as what has already been said about the mixing.
